  • 900 grams fresh broccoli providing a vibrant green base
  • 450 grams cauliflower adding a tender bite
  • 5 cups milk ensuring a creamy texture
  • 1 teaspoon salt to taste
  • 1 medium onion, chopped for an aromatic foundation
  • 1 medium carrot, chopped for natural sweetness
  • 1 medium bell pepper, chopped for slight crunch
  • 1 clove garlic, minced to enhance aroma
  • 2 tablespoons olive oil for sautéing
  • 1 tablespoon parsley, chopped for garnish
  • 200 grams red cherry tomatoes, halved for a fresh touch

Instructions
 

Preparation

  • Chop the broccoli and cauliflower into small florets for even cooking.
  • In a large pot, bring the milk to a simmer over medium heat and add a pinch of salt.
  • Once the milk is bubbling, add the broccoli and cauliflower florets and cook for about 15-20 minutes until tender.
  • In a skillet, heat olive oil over medium heat and sauté the chopped onion, carrot, bell pepper, and minced garlic until softened.
  • Use an immersion blender to puree the mixture until smooth, or blend in batches if using a traditional blender.
  • Stir the sautéed vegetables into the creamy mixture and season with additional salt to taste.
  • Garnish with chopped parsley and halved cherry tomatoes, then serve hot.

Notes

For enhanced flavor, consider adding nutmeg or white pepper. You can also add cheese or protein for a richer dish. Store leftovers in an airtight container for up to three days.
