Preparation

  • In a medium bowl, beat the softened cream cheese with 1/4 cup of sugar, 1 egg, and 1 teaspoon of vanilla extract until smooth and creamy. Set aside.
  • Preheat your oven to 350°F (175°C) and grease a 9-inch round or square baking pan.

Make the Cake Batter

  • In a separate bowl, whisk together 2 cups of flour, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, and 1/4 teaspoon of salt.
  • In another bowl, beat the 1/2 cup of softened butter and 1 cup of sugar until light and fluffy. Add the 2 eggs, one at a time, followed by 1 teaspoon of vanilla extract.
  • Gradually combine the dry ingredients with the wet mixture, alternating with 1 cup of sour cream until just combined.

Assemble the Coffee Cake

  • Pour half of the cake batter into the prepared pan, smoothing it into an even layer.

Prepare the Streusel Topping
