  • 125 ml whipping cream For a light, airy texture.
  • 250 g low-fat cream cheese, softened Forming the creamy heart of the parfait.
  • 125 ml low-fat sour cream, room temperature Adding depth and tanginess.
  • 1 teaspoon vanilla extract Infusing a warm, aromatic essence.

Instructions
 

Preparation of Blueberry Layer

  • Combine the frozen blueberries, lemon juice, and sugar in a saucepan. Heat over medium heat for about 5-7 minutes, stirring occasionally until thickened. Let it cool to room temperature.

Make the Biscuit Base

  • Crush the digestive biscuits into fine crumbs. Mix with melted butter until combined and resembles wet sand. Press into the bottoms of serving glasses to form a solid base. Refrigerate.

Prepare Cheesecake Filling

  • Melt the white chocolate gently and let it cool slightly. In a mixing bowl, beat cream cheese, sour cream, and vanilla until creamy. Gradually mix in the cooled white chocolate and fold in the whipped cream gently.

Assemble Parfaits

  • Layer the parfaits by adding cheesecake mixture over the biscuit base, followed by a layer of cooled blueberry mixture. Repeat until the glasses are full, finishing with blueberry layer. Chill in the refrigerator for at least 2 hours.

Garnish

  • Optionally add a sprinkle of fresh blueberries or a dollop of whipped cream before serving.

Notes
