Instructions
 

Preparation of the crust

  • In a medium bowl, mix graham cracker crumbs, granulated sugar, and ground cinnamon.
  • Pour in the melted butter, stirring until the mixture resembles wet sand.
  • Spoon the crumb mixture into the bottom of mason jars, pressing down to form a solid crust layer.

Making the cheesecake filling

  • In a separate bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  • Whip the heavy cream in another bowl until stiff peaks form.
  • Gently fold the whipped cream into the cream cheese mixture to preserve the lightness.
  • Fold in lime juice and zest until just combined.

Assembly

  • Spoon the cheesecake filling on top of the crust in each jar.
  • Top with fresh blackberries and drizzle with honey if desired.

Chilling

  • Refrigerate for at least 2 hours, or overnight for best flavor development.
