Instructions
 

Preparation

  • Preheat your oven to 325°F (163°C).
  • Line a muffin tin with paper liners.
  • In a small bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir until all the crumbs are coated. Spoon about 1 tablespoon of this mixture into each muffin cup and press down to create a solid crust.

Making the Filling

  • In a large bowl, beat the cream cheese and 1/2 cup granulated sugar until smooth.
  • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, lime juice, and lime zest until smooth.
  • Gently fold in the fresh blackberries.

Baking

  • Spoon the cheesecake filling over the crusts in each muffin tin, filling each cup about 3/4 full.
  • Bake for 18-20 minutes or until the tops are set and a toothpick comes out clean.
  • Let the cupcakes cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Chilling and Serving

  • Refrigerate the cupcakes for at least 2 hours before serving.
  • Before serving, top each cupcake with fresh blackberries and lime zest. Optionally, add a dollop of whipped cream.

Notes

Use room temperature ingredients for smoother mixing. Substitute other berries if fresh blackberries aren't available, and consider extra lime zest for added flavor.
