  • 1.5 cups graham cracker crumbs These will form a crunchy, flavorful base.
  • 0.25 cups sugar Sweetens the crust.

For the filling

  • 3 cups cream cheese, softened Provides essential creamy richness.

For the topping

Instructions
 

Preparation

  • Preheat your oven to 325°F (165°C).
  • In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix well until it resembles wet sand.
  • Press the mixture firmly into the bottom of a 9-inch springform pan, creating an even layer. Bake for 10 minutes and let it cool.
  • In a large bowl, use an electric mixer to beat together the softened cream cheese, sour cream, granulated sugar, vanilla extract, and lemon juice until smooth and creamy.
  • Add the eggs one at a time, mixing well after each addition.

Baking

  • Pour the cheesecake mixture over the cooled crust. Tap the pan gently on the countertop to remove any air bubbles.
  • Bake for 50-60 minutes. The cheesecake is done when the center is set but still slightly jiggly.
  • Once baked, let the cheesecake cool at room temperature for about an hour. Then, refrigerate it for at least four hours or preferably overnight to set fully.

Topping

  • In a small saucepan, combine the dark cherries and cherry liqueur substitute. Cook over medium heat for 5-7 minutes, stirring occasionally.
  • Remove from heat and let it cool.
  • In a separate bowl, whip the heavy cream and powdered sugar together until stiff peaks form.
  • Once the cheesecake has chilled, spread the whipped cream evenly over the top, then drizzle with the cherry mixture.
  • Finally, sprinkle dark chocolate shavings on top.

Notes

Ensure cream cheese is at room temperature for an ultra-smooth batter. You can mix some cherry juice with the cheesecake batter for more flavor. Leftover cheesecake makes for fantastic breakfast bites or snacks.
