Ingredients
  

Main Ingredients

  • 1 lb smoked sausage, sliced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup long-grain rice
  • 1 medium onion, chopped
  • 3 cloves garlic, minced

Seasoning and Cooking Ingredients

  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp chili powder
  • to taste Salt and pepper

Instructions
 

Preparation

  • Heat olive oil in a large skillet over medium heat.
  • Sauté chopped onion and bell pepper until softened, about 5 minutes.
  • Add minced garlic and cook for an additional minute.
  • Add sliced sausage to the skillet and brown it until crispy around the edges.
  • Stir in drained black beans, cumin, paprika, chili powder, salt, and pepper. Mix well.

Cooking

  • Simmer the mixture for about 10 minutes.
  • While the mixture simmers, prepare rice according to the package instructions.
  • Once both the rice and sausage mixture are ready, combine them in the skillet and mix gently until heated through.

Serving

  • Serve hot, adorned with a sprinkle of fresh herbs if desired.

Notes

For a healthier version, use turkey sausage and brown rice. This dish can be frozen and reheated beautifully.
