Instructions
 

Preparation of Shredded Beef

  • Heat a large cast-iron skillet over medium-high heat. Add the olive oil and place the chuck roast into the skillet. Sear the meat for about 3-5 minutes on each side until browned.
  • Transfer the roast to a crockpot, sprinkle with beef bouillon, and pour the enchilada sauce over it. Cover and cook on low heat for 10 hours or until the meat is tender.
  • After cooking, shred the beef and return it to the slow cooker to absorb the flavorful juices.

Assembly and Cooking

  • Take the Texas toast slices and butter one side of each slice.
  • In a heated skillet, place the buttered side of a slice of bread down. Pile on the shredded birria beef, diced onion, queso fresco, mozzarella cheese, and cilantro on top.
  • Top with another slice of Texas toast, ensuring the buttered side is facing up.
  • Cook each sandwich for around 5-7 minutes per side until golden brown and the cheese is melted. Serve with beef broth for dipping.

Notes

Consider marinating the chuck roast in enchilada sauce for a few hours before cooking for deeper flavors. You can customize your sandwich with toppings like sliced jalapeƱos or avocado. A sprinkle of lime juice can add a bright contrast before serving.
