Preparation

  • Heat oil in a large skillet over medium heat.
  • Season the chicken pieces generously with salt, pepper, cumin, and paprika.
  • Sear the seasoned chicken in the skillet until golden brown on all sides, about 5-7 minutes.
  • Add the minced garlic and allow it to cook for about a minute.
  • Pour in the can of coconut milk and the freshly squeezed lime juice, stirring to combine.
  • Reduce heat and let the mixture simmer for 20-25 minutes, allowing the chicken to become tender.
  • Serve hot with steamed rice or your choice of side.

Notes

For extra flavor, marinate chicken in spices and lime juice for at least an hour. Optionally, add bell peppers or onions while cooking garlic. To spice it up, include red pepper flakes or sliced chili. Adjust seasoning to your taste.
