Preparation

  • Preheat your oven to 325°F (160°C).
  • In a mixing bowl, combine graham cracker crumbs and melted butter, then press this mixture into the bottom of a 9-inch springform pan.
  • Bake the crust for 10 minutes until lightly golden and allow it to cool completely.
  • In a large bowl, beat cream cheese until smooth, then gradually mix in powdered sugar and vanilla.
  • In a separate bowl, whip heavy cream until stiff peaks form, then fold it into the cream cheese mixture.
  • Pour the creamy filling over the cooled crust, smoothing the top with a spatula.
  • Refrigerate the cheesecake for at least 4 hours.

Topping

  • In a small bowl, toss sliced strawberries with granulated sugar and let them sit for 15 minutes.
  • Once the cheesecake is set, top it with the macerated strawberries and sprinkle with the strawberry crunch topping.
