Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease the muffin cups.
  • In a large bowl, whisk together the flour, baking powder, baking soda, salt, and granulated sugar.
  • In a separate bowl, whisk together the egg, milk, melted butter, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and stir until just combined.
  • Gently fold in the mixed berries, being cautious not to break them apart.
  • In a small bowl, mix cream cheese, powdered sugar, and vanilla extract until smooth.
  • Spoon a small amount of muffin batter into each muffin cup, followed by a dollop of the cream cheese mixture.
  • Top with more muffin batter until the muffin cups are about 3/4 full.
  • Use a toothpick to swirl the cream cheese filling into the muffin batter.
  • Bake for 18-22 minutes, or until a toothpick inserted comes out clean.
  • Cool in the pan for a few minutes before transferring to a wire rack.

Notes

To elevate your muffins, consider adding lemon zest or chopped nuts. Substitute half of the flour with whole wheat for a healthier option.
