Crust Ingredients

  • 1 cup graham cracker crumbs Provides crunchy texture.
  • 1/4 cup melted butter Binding the crust together.
  • 2 tbsp sugar For sweetness in the crust.

Filling Ingredients

  • 1 1/2 cups cottage cheese Creamy base for the cheesecake.
  • 1 cup fresh mixed berries Choose strawberries, blueberries, and raspberries.
  • 2 tbsp honey Natural sweetener.
  • 1/4 cup Greek yogurt Adds richness.
  • 2 large eggs Bind the filling.
  • 1 tsp vanilla extract Enhances flavor.
  • 1 tbsp lemon juice Brightens the flavor.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, combine the graham cracker crumbs, melted butter, and 1 tbsp of sugar. Press firmly into the bottom of a springform pan.
  • Blend cottage cheese, honey, Greek yogurt, eggs, vanilla extract, lemon juice, and remaining sugar in a blender until smooth.
  • Pour the filling over the crust in the pan.
  • Bake for 45-50 minutes until the center is set and lightly golden.
  • Allow to cool at room temperature.
  • Mix fresh berries with 1 tbsp honey to create a topping.
  • Once the cheesecake has cooled, spoon the berry mix over the top.
  • Chill the cheesecake in the fridge for 2-3 hours before serving.

Notes

Serve with a dollop of whipped cream or a scoop of vanilla ice cream. Garnish with mint leaves.
