  • Heat up that skillet! Begin by heating a skillet over medium heat and brown the ground beef until it sizzles beautifully. Once cooked, drain off any excess fat.
  • Add in the Aromatics. Toss in the diced onion and minced garlic to the skillet. Sauté for about 3-4 minutes, allowing the onion to soften and release its fragrant aroma.
  • Spice it Up. Stir in the chili powder, cumin, salt, and black pepper. Pour in 1 cup of enchilada sauce and allow the mixture to simmer for about 5 minutes, letting those flavors meld beautifully.
  • Preheat & Prepare. Preheat your oven to 375°F (190°C). Meanwhile, grease a 9x13-inch baking dish to ensure a hassle-free cleanup later.
  • Build the Base. Spread a layer of enchilada sauce in the bottom of the baking dish, creating a flavorful foundation for your casserole.
  • Layer it Up! Layer the corn tortillas over the sauce, followed by half of the beef mixture, a third of the black beans, and a generous amount of shredded cheeses. Repeat the layers, finishing with another layer of tortillas.
  • Finishing Touches. Pour the remaining enchilada sauce evenly over the top and sprinkle on the remaining cheese, creating a bubbly topping that beckons.
  • Bake it Right. Cover the dish with foil and bake for 20 minutes. Then, uncover and bake for an additional 10-15 minutes, witnessing the cheese turn that perfect golden hue.
