Preparation

  • Begin by selecting a ripe banana and place it in a large mixing bowl. With a fork or a potato masher, crush the banana until it reaches a smooth consistency.
  • Add 1 cup of all-purpose flour, 1 tablespoon of sugar, 1 teaspoon of baking powder, and 1/4 teaspoon of salt to the bowl. Stir gently until combined.
  • In a separate bowl, whisk together 1/2 cup of milk, 1 egg, 1 tablespoon of melted butter, and 1/2 teaspoon of vanilla extract.
  • Pour the wet mixture into the dry ingredients and stir gently until just combined.

Cooking

  • Heat a non-stick skillet over medium heat and lightly grease it with butter or cooking spray.
  • Pour about 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes until bubbles form on the surface.
