For the dish

  • 1/4 cup olive oil Use high-quality for best results.
  • 1/4 teaspoon dried oregano
  • 1 pinch red pepper flakes Add more for extra heat.
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 cup olives, pitted or not pitted
  • 1/2 cup chopped sun-dried tomatoes or marinated roasted tomatoes, oil drained
  • 1 clove garlic, thinly sliced Infuses the dish with aromatic flavor.
  • 6 ounces feta cheese, block
  • to taste Chopped fresh parsley, oregano, thyme, or basil for garnish
  • as needed Toasted baguette slices or crackers for serving

Instructions
 

Preparation

  • Preheat your oven to 375 degrees F, arranging the top rack 4-6 inches from the broiler and another rack in the middle.
  • In a small bowl, stir together the olive oil, dried oregano, red pepper flakes, kosher salt, and black pepper.
  • In a medium bowl, combine the olives, tomatoes, and thinly sliced garlic.
  • Place the block of feta in a small baking dish, leaving some space around it.
  • Spoon the olives and tomatoes mixture around the feta.
  • Pour the prepared olive oil mixture over the ingredients in the baking dish.

Cooking

  • Bake the feta for 15-18 minutes until it starts to brown slightly at the edges.
  • Turn on the broiler to brown the top further for about 2-3 minutes, watching closely to avoid burning.

Serving

  • Garnish with fresh herbs like parsley, oregano, or basil and serve warm with toasted baguette slices, crackers, or pita chips.

Use high-quality feta cheese for best flavor. This dish can be served with a light salad or as part of a Mediterranean-inspired spread.
