  • 1 cup salad greens Any leafy greens can be used.
  • 1 cup strawberries, diced Preferably fresh.
  • 1/2 cup fresh mozzarella, diced
  • 2 tablespoons pistachio pesto Store-bought or homemade.
  • 2 tablespoons balsamic reduction Drizzle over before serving.

Preparation

  • Arrange the avocado halves on a bed of salad greens.
  • In a separate bowl, combine diced strawberries and mozzarella.
  • Mix them gently with pistachio pesto until evenly coated.
  • Spoon the strawberry and mozzarella mixture over the avocado halves.
  • Drizzle lightly with balsamic reduction just before serving.

Notes

For added flavor, sprinkle with cracked black pepper or nuts. To make this a full meal, consider adding grilled chicken or chickpeas.
