For the Meatballs

  • 1 pound ground chicken Lean and tender, provides a great base for meatballs.

For the Sauce

  • 1-3 tablespoons Thai red curry paste Adjust based on spice tolerance.
  • 1 can (14 oz) coconut milk Creamy base for the curry.

Instructions
 

Preparation

  • Combine ground chicken, shredded zucchini, chopped green onions, one chopped shallot, grated ginger, grated garlic, cayenne pepper, black pepper, and tamari in a mixing bowl. Mix well until combined.
  • Form the mixture into tablespoon-sized meatballs using oiled hands.

Cooking

  • Heat a large skillet over medium-high heat and add two tablespoons of olive oil.
  • Add the meatballs and sear them until golden brown and crisp, about four to five minutes, turning occasionally. Transfer them to a plate.
  • In the same skillet, add one tablespoon of olive oil, remaining shallot, garlic, ginger, sliced bell peppers, butter, and Thai red curry paste. Sauté until fragrant, about two minutes.
  • Stir in the coconut milk and three tablespoons of tamari, then return the meatballs to the skillet. Let simmer until meatballs are fully cooked, about five minutes.
  • Stir in the chopped cilantro before serving.

Serving Suggestions

  • Serve the meatball curry over a bed of fluffy rice and garnish with fresh lime, basil, and more green onions.
