Instructions
 

Preparation

  • Heat the olive oil in a spacious skillet over medium heat until shimmering.

  • Stir in the minced garlic, curry powder, ground cinnamon, paprika, bay leaf, grated ginger, white sugar, and a sprinkle of salt, toasting the spices for about two minutes.

Cooking

  • Add the diced chicken pieces to the skillet, ensuring they are coated with the spice mixture.
  • Mix in the tomato paste, plain yogurt, and coconut milk until well combined.
  • Increase the heat to bring the mixture to a gentle boil.
  • Once boiling, reduce the heat to low, cover the skillet, and let it simmer for 20 to 25 minutes until the chicken absorbs the flavors and becomes tender.
  • After simmering, remove the bay leaf, stir in the lemon juice and cayenne pepper, and let it simmer for an additional five minutes before serving.
