Preparation

  • Place the dried apricots and chopped pistachios into a food processor and blend into a finely textured mixture.
  • Add sweetened condensed milk and vanilla extract; sprinkle in ground cardamom if using, then pulse until everything is combined into a sticky dough.
  • Roll the mixture into small balls, roughly an inch in diameter, and place each ball on a parchment-lined tray.
  • Melt the white chocolate in a small bowl until silky and glossy. Dip each truffle in the melted white chocolate, allowing excess to drip off.
  • Roll each coated truffle in the chopped pistachios and refrigerate for at least one hour.

Notes

For variations, consider dark chocolate instead of white, or substitute honey for sweetened condensed milk. Ensure not to rush the refrigeration process for the best texture.
