  • 1.5 lb baby gold potatoes, cut in half
  • 1 tbsp wholegrain mustard
  • 1/4 cup olive oil
  • 1-2 cloves garlic, crushed
  • Salt & pepper to taste
  • Fresh parsley, chopped (optional for garnish) Optional, for garnish

Instructions
 

Preparation

  • Preheat your air fryer to 400 degrees Fahrenheit.
  • In a small bowl, mix together the wholegrain mustard, olive oil, crushed garlic, salt, and pepper.
  • Toss the halved baby gold potatoes in the mustard mixture until they are well coated.

Cooking

  • Place the potatoes in the air fryer basket in a single layer.
  • Set the timer for 10 minutes and avoid opening the basket too frequently.
  • After 10 minutes, shake the basket gently to toss the potatoes around.
  • Continue cooking for an additional 10 to 15 minutes until golden brown and fork-tender.

Serving

  • Season the potatoes with additional salt if desired and garnish with chopped parsley before serving.

Notes

For extra zing, add a dash of lemon juice or zest to the mustard mixture. You can also use different types of mustard for unique flavor profiles.
