Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a mixing bowl, whisk together the all-purpose flour, baking soda, and salt.
  3. In another bowl, mix the melted coconut oil, brown sugar, and vanilla extract. Add the plant-based milk and stir until creamy.
  4. Gradually combine the dry ingredients into the wet mixture, gently stirring to avoid over-mixing. Fold in the dairy-free chocolate chips.
  5. Using a cookie scoop, drop spoonfuls of dough onto prepared baking sheets, leaving space for spreading.
  6. Bake for 10-12 minutes, until the edges are golden and the centers remain soft. Let cool slightly before transferring to wire racks.

Notes

For a more complex flavor, let the dough rest overnight in the fridge. You can substitute brown sugar with coconut sugar for a lower glycemic index option.
