Ingredients
Scale
- 1 ½ cups all-purpose flour
- 1 tsp baking soda
- ¼ tsp salt
- ⅓ cup melted coconut oil
- ¾ cup brown sugar
- 2 tsp vanilla extract
- ¼ cup plant-based milk (almond or soy)
- 1 cup dairy-free chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a mixing bowl, whisk together the all-purpose flour, baking soda, and salt.
- In another bowl, mix the melted coconut oil, brown sugar, and vanilla extract. Add the plant-based milk and stir until creamy.
- Gradually combine the dry ingredients into the wet mixture, gently stirring to avoid over-mixing. Fold in the dairy-free chocolate chips.
- Using a cookie scoop, drop spoonfuls of dough onto prepared baking sheets, leaving space for spreading.
- Bake for 10-12 minutes, until the edges are golden and the centers remain soft. Let cool slightly before transferring to wire racks.
Notes
For a more complex flavor, let the dough rest overnight in the fridge. You can substitute brown sugar with coconut sugar for a lower glycemic index option.
