Description

A hearty and nourishing soup combining Italian sausage and nutrient-rich kale, perfect for cozy evenings.


Ingredients

  • 1 lb Italian sausage (mild or spicy)
  • 2 cups fresh kale, chopped
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 medium carrots, sliced
  • 2 medium potatoes, diced
  • 1 tsp red pepper flakes (optional)

Instructions

  1. In a large pot over medium heat, brown the Italian sausage for about 5 minutes until cooked through.
  2. Add diced onions and minced garlic; sauté for 2 minutes until fragrant.
  3. Stir in sliced carrots and diced potatoes; cook for an additional 3 minutes.
  4. Pour in chicken broth and bring to a gentle boil.
  5. Reduce heat and let simmer for 10 minutes.
  6. Add chopped kale and red pepper flakes (if using), cooking until the kale wilts (about 5 minutes).
  7. Serve hot, optionally garnished with parmesan cheese and accompanied by crusty bread.

Notes

For a lighter option, use turkey or chicken sausage and substitute potatoes with cauliflower.
