Ingredients

- 2 cups fresh kale, chopped
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 2 medium carrots, sliced
- 2 medium potatoes, diced
- 1 tsp red pepper flakes (optional)
Instructions
- In a large pot over medium heat, brown the Italian sausage for about 5 minutes until cooked through.
- Add diced onions and minced garlic; sauté for 2 minutes until fragrant.
- Stir in sliced carrots and diced potatoes; cook for an additional 3 minutes.
- Pour in chicken broth and bring to a gentle boil.
- Reduce heat and let simmer for 10 minutes.
- Add chopped kale and red pepper flakes (if using), cooking until the kale wilts (about 5 minutes).
- Serve hot, optionally garnished with parmesan cheese and accompanied by crusty bread.
Notes
For a lighter option, use turkey or chicken sausage and substitute potatoes with cauliflower.
