Description

A hearty Sausage and Kale Soup that combines robust Italian sausage and vibrant kale, perfect for cozy evenings.


Ingredients

Scale
  • 1 lb Italian sausage (mild or spicy)
  • 2 cups fresh kale, chopped
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 medium carrots, sliced
  • 2 medium potatoes, diced
  • 1 tsp red pepper flakes (optional)

Instructions

  1. In a large pot over medium heat, brown the Italian sausage for about 5 minutes until cooked through.
  2. Add diced onions and minced garlic; sauté for 2 minutes until fragrant.
  3. Stir in sliced carrots and diced potatoes; cook for an additional 3 minutes.
  4. Pour in the chicken broth and bring to a gentle boil. Reduce heat and let simmer for 10 minutes.
  5. Add the chopped kale and red pepper flakes (if using), cooking until the kale wilts (about 5 minutes).
  6. Serve hot, optionally garnished with parmesan cheese and crusty bread on the side.

Notes

Leftover soup tastes even better the next day. To store, cool completely and freeze in airtight containers for up to three months.
