- 1 lb baby carrots, peeled
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1/2 cup ricotta cheese
- 1 tablespoon honey
- 1 teaspoon hot sauce (adjust to taste)
- Fresh parsley, for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss the peeled baby carrots with olive oil, salt, and pepper until they are evenly coated.
- Spread the carrots in a single layer on the baking sheet and roast for 20–25 minutes, or until they are tender and slightly caramelized, turning halfway through cooking.
- While the carrots are roasting, place the ricotta cheese in a small bowl and whip it with a hand mixer or whisk until it is light and fluffy.
- In another small bowl, mix honey and hot sauce to create your hot honey, adjusting spice level to your liking.
- Spread the whipped ricotta on a serving platter or individual plates, arrange the roasted carrots on top, drizzle with hot honey, and garnish with fresh parsley if desired.
- Serve immediately while warm.
Notes
Store leftovers in an airtight container in the refrigerator for up to three days. Reheat before serving.
