Description

A delicious side dish featuring sweet roasted carrots topped with creamy whipped ricotta and a drizzle of spicy hot honey.


Ingredients

  • 1 lb baby carrots, peeled
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1/2 cup ricotta cheese
  • 1 tablespoon honey
  • 1 teaspoon hot sauce (adjust to taste)
  • Fresh parsley, for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss the peeled baby carrots with olive oil, salt, and pepper until they are evenly coated.
  3. Spread the carrots in a single layer on the baking sheet and roast for 20–25 minutes, or until they are tender and slightly caramelized, turning halfway through cooking.
  4. While the carrots are roasting, place the ricotta cheese in a small bowl and whip it with a hand mixer or whisk until it is light and fluffy.
  5. In another small bowl, mix honey and hot sauce to create your hot honey, adjusting spice level to your liking.
  6. Spread the whipped ricotta on a serving platter or individual plates, arrange the roasted carrots on top, drizzle with hot honey, and garnish with fresh parsley if desired.
  7. Serve immediately while warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat before serving.
