- 4 cups low-sodium chicken broth
- 2 cups chopped carrots (approximately 2 medium)
- 2 cups diced celery (about 2 stalks)
- 1 medium onion, diced
- 4 cloves fresh garlic, minced
- Juice of 1 large lemon (about ¼ cup)
- 2 tsp dried oregano
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Prepare the Ingredients: Dice the onion, chop the carrots and celery, and mince the garlic.
- Sauté Aromatics: In a large pot over medium heat, heat olive oil and sauté the onions until translucent (about 5 minutes), then add garlic.
- Cook the Chicken: Add chicken breasts to the pot, pour in chicken broth, season with salt, pepper, and oregano, and bring to a simmer for about 20 minutes.
- Add Vegetables: Remove chicken to shred, then add carrots and celery back into the pot, cooking for an additional 10 minutes.
- Finish and Serve: Return shredded chicken to pot, stir in lemon juice, adjust seasoning, and serve hot.
