  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 4 cups low-sodium chicken broth
  • 2 cups chopped carrots (approximately 2 medium)
  • 2 cups diced celery (about 2 stalks)
  • 1 medium onion, diced
  • 4 cloves fresh garlic, minced
  • Juice of 1 large lemon (about ¼ cup)
  • 2 tsp dried oregano
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Prepare the Ingredients: Dice the onion, chop the carrots and celery, and mince the garlic.
  2. Sauté Aromatics: In a large pot over medium heat, heat olive oil and sauté the onions until translucent (about 5 minutes), then add garlic.
  3. Cook the Chicken: Add chicken breasts to the pot, pour in chicken broth, season with salt, pepper, and oregano, and bring to a simmer for about 20 minutes.
  4. Add Vegetables: Remove chicken to shred, then add carrots and celery back into the pot, cooking for an additional 10 minutes.
