Description

Experience the savory delight of Mediterranean Chicken Meatballs and Orzo, a dish brimming with flavors that transport you to the vibrant shores of Greece.


Ingredients

  • 1 lb ground chicken
  • 1 cup breadcrumbs (plain or Italian)
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup feta cheese, crumbled
  • 3 cloves garlic, minced
  • Zest of 1 lemon
  • 1 cup orzo pasta
  • 2 tbsp olive oil (for sauce)
  • 1 cup low-sodium chicken broth
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. In a large bowl, combine ground chicken, breadcrumbs, minced garlic, parsley, feta cheese, lemon zest, salt, and pepper. Mix thoroughly.
  3. Shape the mixture into golf ball-sized meatballs and place them in the baking dish.
  4. Bake for 20-25 minutes until golden brown.
  5. Cook orzo pasta according to package instructions and drain.
  6. In a skillet, heat olive oil and sauté remaining minced garlic until fragrant. Add chicken broth and let simmer.
  7. Toss cooked orzo with the garlic-infused sauce. Serve meatballs on top of the orzo.

Notes

Store leftovers in airtight containers. Freeze portions for up to 3 months and reheat before serving.
