Ingredients

- 1 lb ground chicken
- 1 cup breadcrumbs (plain or Italian)
- 1/4 cup fresh parsley, chopped
- 1/2 cup feta cheese, crumbled
- 3 cloves garlic, minced
- Zest of 1 lemon
- 1 cup orzo pasta
- 2 tbsp olive oil (for sauce)
- 1 cup low-sodium chicken broth
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
- In a large bowl, combine ground chicken, breadcrumbs, minced garlic, parsley, feta cheese, lemon zest, salt, and pepper. Mix thoroughly.
- Shape the mixture into golf ball-sized meatballs and place them in the baking dish.
- Bake for 20-25 minutes until golden brown.
- Cook orzo pasta according to package instructions and drain.
- In a skillet, heat olive oil and sauté remaining minced garlic until fragrant. Add chicken broth and let simmer.
- Toss cooked orzo with the garlic-infused sauce. Serve meatballs on top of the orzo.
Notes
Store leftovers in airtight containers. Freeze portions for up to 3 months and reheat before serving.
