Description

A comforting and indulgent low-carb chicken casserole packed with fresh spinach, bell peppers, and creamy goodness.


Ingredients

  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cups fresh spinach
  • 8 oz cream cheese (softened)
  • 1 cup shredded sharp cheddar cheese
  • 1 cup diced bell peppers (red or yellow)
  • 1 cup sliced mushrooms
  • 2 tsp garlic powder
  • 2 tsp dried Italian herbs
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. Generously season the chicken breasts with salt, pepper, garlic powder, and dried Italian herbs.
  3. Sauté the diced bell peppers and sliced mushrooms in olive oil until softened, about 5 minutes.
  4. In a large mixing bowl, combine the sautéed veggies with softened cream cheese, blending until smooth, then fold in the seasoned chicken.
  5. Pour the mixture into the prepared baking dish and top with shredded cheddar cheese.
  6. Bake for 30-35 minutes or until bubbly and the chicken is cooked through.
  7. Allow to cool slightly before serving.

Notes

Suitable for freezing and reheating. Can be made ahead of time. Be careful not to overbake.
