- 3 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 cups fresh spinach
- 8 oz cream cheese (softened)
- 1 cup shredded sharp cheddar cheese
- 1 cup diced bell peppers (red or yellow)
- 1 cup sliced mushrooms
- 2 tsp garlic powder
- 2 tsp dried Italian herbs
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
- Generously season the chicken breasts with salt, pepper, garlic powder, and dried Italian herbs.
- Sauté the diced bell peppers and sliced mushrooms in olive oil until softened, about 5 minutes.
- In a large mixing bowl, combine the sautéed veggies with softened cream cheese, blending until smooth, then fold in the seasoned chicken.
- Pour the mixture into the prepared baking dish and top with shredded cheddar cheese.
- Bake for 30-35 minutes or until bubbly and the chicken is cooked through.
- Allow to cool slightly before serving.
Notes
