Ingredients

  • 1 lb lean ground beef
  • 8 oz wide egg noodles
  • 1 medium onion, finely chopped
  • 8 oz fresh mushrooms, sliced
  • 2 cloves fresh garlic, minced
  • 1 cup full-fat sour cream
  • 1 cup low-sodium beef broth
  • 1 tsp Dijon mustard
  • 2 tbsp flour
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients: chop the onions, mince the garlic, and slice the mushrooms.
  2. Brown the ground beef in a large skillet over medium-high heat until fully cooked, draining excess fat.
  3. Add chopped onions and sliced mushrooms; sauté until onions are translucent, about 5 minutes.
  4. Stir in minced garlic and cook for 1 more minute until fragrant.
  5. Sprinkle flour over the mixture; stir to combine, then gradually add beef broth, mixing until it thickens.
  6. Reduce heat to low, fold in sour cream and Dijon mustard until fully combined.
  7. Serve stroganoff over cooked egg noodles; garnish with parsley if desired.

Notes
