- 8 oz wide egg noodles
- 1 medium onion, finely chopped
- 8 oz fresh mushrooms, sliced
- 2 cloves fresh garlic, minced
- 1 cup full-fat sour cream
- 1 cup low-sodium beef broth
- 1 tsp Dijon mustard
- 2 tbsp flour
- Salt and pepper to taste
Instructions
- Prepare your ingredients: chop the onions, mince the garlic, and slice the mushrooms.
- Brown the ground beef in a large skillet over medium-high heat until fully cooked, draining excess fat.
- Add chopped onions and sliced mushrooms; sauté until onions are translucent, about 5 minutes.
- Stir in minced garlic and cook for 1 more minute until fragrant.
- Sprinkle flour over the mixture; stir to combine, then gradually add beef broth, mixing until it thickens.
- Reduce heat to low, fold in sour cream and Dijon mustard until fully combined.
- Serve stroganoff over cooked egg noodles; garnish with parsley if desired.
Notes
Substitute ground beef for turkey or chicken for a healthier option. Adjust seasonings and add vegetables as preferred.
