Description
A comforting dish of juicy garlic herb chicken served with creamy mashed potatoes and glazed carrots, perfect for weeknights or family gatherings.

- 4 boneless, skinless chicken breasts (1.5 lbs)
- 4 cloves fresh garlic, minced
- 2 tbsp mixed fresh herbs (rosemary, thyme, parsley)
- 3 tbsp extra virgin olive oil
- 2 tbsp butter
- 2 lbs russet or Yukon Gold potatoes, peeled and chopped
- 1 lb baby carrots
- 2 tbsp honey
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Mince the garlic and chop your fresh herbs.
- In a bowl, mix olive oil, the minced garlic, and chopped herbs along with salt and pepper.
- Coat the chicken breasts in this mixture.
- Place the chicken in a baking dish and roast for 25-30 minutes until the internal temperature reaches 165°F (75°C).
- While the chicken is roasting, boil the chopped potatoes in salted water for 15-20 minutes until fork-tender.
- In a separate saucepan, cook baby carrots with honey and a splash of water for about 10-12 minutes until glazed.
- Drain the potatoes, add butter and mash until smooth; season with salt and pepper.
- Serve the herb-roasted chicken with mashed potatoes and glazed carrots, drizzled with remaining herb-infused olive oil.
Notes
If using skin-on chicken, be aware that it requires a longer cooking time. Leftovers can be stored in airtight containers for up to three days.
