A delightful meatball sub recipe that combines juicy meatballs with marinara sauce and melted cheese, perfect for a quick weeknight dinner.

- 1 lb lean ground beef
- 1/2 cup plain breadcrumbs
- 1 large egg
- 1/4 cup grated Parmesan cheese
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup marinara sauce
- 4 sub rolls
- 1 cup shredded mozzarella cheese
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the ground beef, breadcrumbs, egg, Parmesan cheese, salt, and pepper until well mixed.
- Shape the mixture into golf ball-sized meatballs and place them on the prepared baking sheet, leaving space between each one.
- Bake for about 20 minutes or until golden brown and cooked through.
- Meanwhile, slice open the sub rolls and place them on another baking sheet.
- After the meatballs are done, spoon marinara sauce over them and sprinkle mozzarella cheese on top. Return to the oven for an additional 5 minutes until cheese is bubbly.
- Serve the meatball subs with extra marinara sauce on the side.
Notes
For a richer flavor, brush sub rolls with garlic butter before toasting. Leftover meatballs can be frozen and reheated for later meals.
