- 2 medium zucchinis, grated
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup crumbled feta cheese
- ¼ cup fresh parsley, chopped
- 3 garlic cloves, minced
- ½ tsp salt
- ¼ tsp black pepper
- Olive oil for frying
Instructions
- Grate the zucchinis into a large mixing bowl.
- Squeeze out excess moisture using a clean kitchen towel.
- Combine eggs, crumbled feta, minced garlic, chopped parsley, flour, salt, and black pepper in the bowl.
- Heat olive oil in a skillet over medium heat.
- Form small patties from the mixture, about 2 inches wide, and fry until golden brown for 3-4 minutes per side.
- Transfer fritters to a plate lined with paper towels to drain excess oil.
Notes
Serve with tzatziki or a tangy yogurt sauce for dipping. Leftovers can be refrigerated or frozen for later.
