Description

Delicious crispy fritters bursting with Mediterranean flavors from zucchini, feta, and herbs; perfect as an appetizer or side dish.


Ingredients

  • 2 medium zucchinis, grated
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup crumbled feta cheese
  • ¼ cup fresh parsley, chopped
  • 3 garlic cloves, minced
  • ½ tsp salt
  • ¼ tsp black pepper
  • Olive oil for frying

Instructions

  1. Grate the zucchinis into a large mixing bowl.
  2. Squeeze out excess moisture using a clean kitchen towel.
  3. Combine eggs, crumbled feta, minced garlic, chopped parsley, flour, salt, and black pepper in the bowl.
  4. Heat olive oil in a skillet over medium heat.
  5. Form small patties from the mixture, about 2 inches wide, and fry until golden brown for 3-4 minutes per side.
  6. Transfer fritters to a plate lined with paper towels to drain excess oil.

Notes

Serve with tzatziki or a tangy yogurt sauce for dipping. Leftovers can be refrigerated or frozen for later.
