- 1 lb baby potatoes
- 4 tbsp unsalted butter
- 4 cloves fresh garlic, minced
- 2 tbsp olive oil
- 2 tsp fresh rosemary or thyme, chopped
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and dry the baby potatoes, then cut them in halves or quarters.
- In a small saucepan, melt the unsalted butter over low heat, then add minced garlic and sauté until fragrant.
- Toss the potatoes with olive oil, salt, pepper, and fresh herbs in a large bowl.
- Pour the garlic butter over the potatoes and mix well.
- Spread the potatoes on a baking sheet and roast for 30-35 minutes, flipping halfway through.
- Once roasted, serve warm and enjoy!
