A comforting and hearty cream of chicken soup perfect for warming up on cold days.

- 1 pound boneless, skinless chicken thighs
- 4 tablespoons unsalted butter
- 1/4 cup all-purpose flour
- 1 medium onion, chopped
- 2 medium carrots, diced
- 2 stalks celery, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon fresh thyme, chopped
- 1 bay leaf
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Melt butter in a large pot over medium heat.
- Sauté onion, carrots, and celery for 5 minutes. Add garlic and cook for another minute.
- Stir in flour and cook for 1–2 minutes to form a roux.
- Whisk in chicken broth gradually. Add chicken thighs, thyme, bay leaf, salt, and pepper.
- Simmer gently for 20 minutes until chicken is fully cooked.
- Remove chicken, shred it, and return it to the pot. Simmer for 5 minutes more.
- Stir in cream, adjust seasoning, and remove the bay leaf.
- Garnish with parsley and serve with warm bread.
Notes
Use fresh herbs for better flavor. Adjust thickness by adding more or less chicken broth or cream.
