Description

A comforting and hearty cream of chicken soup perfect for warming up on cold days.


Ingredients

  • 1 pound boneless, skinless chicken thighs
  • 4 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 1 medium onion, chopped
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon fresh thyme, chopped
  • 1 bay leaf
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Sauté onion, carrots, and celery for 5 minutes. Add garlic and cook for another minute.
  3. Stir in flour and cook for 1–2 minutes to form a roux.
  4. Whisk in chicken broth gradually. Add chicken thighs, thyme, bay leaf, salt, and pepper.
  5. Simmer gently for 20 minutes until chicken is fully cooked.
  6. Remove chicken, shred it, and return it to the pot. Simmer for 5 minutes more.
  7. Stir in cream, adjust seasoning, and remove the bay leaf.
  8. Garnish with parsley and serve with warm bread.

Notes

Use fresh herbs for better flavor. Adjust thickness by adding more or less chicken broth or cream.
