Description

Delightful clusters of pecans coated in sweet caramel, perfect for holiday gatherings and gifting.


Ingredients

Scale
  • 2 cups Pecans
  • 1/2 cup White Sugar
  • 2 tablespoons Light Corn Syrup
  • 2 tablespoons Unsalted Butter
  • 1/2 teaspoon Ground Cinnamon
  • 1/4 teaspoon Ground Nutmeg
  • 1/4 teaspoon Sea Salt
  • 1/2 teaspoon Vanilla Extract

Instructions

  1. Line a baking sheet with parchment paper and set aside.
  2. Toast the pecans in a dry pan over medium heat for about 5 minutes until fragrant, then set aside.
  3. In the same pan, combine sugar, corn syrup, and butter; stir until melted and bubbling.
  4. Use a candy thermometer to heat the mixture until it reaches 235–240°F (soft-ball stage), then remove from heat.
  5. Stir in ground cinnamon, nutmeg, vanilla, and sea salt, then add the toasted pecans and mix to coat.
  6. Scoop small spoonfuls onto the prepared baking sheet quickly before the caramel hardens.
  7. If desired, sprinkle with sea salt or colored sugar while warm.
  8. Let cool completely, then store in an airtight container.

Notes

For a twist, try adding chocolate chips or using different nuts like walnuts or almonds.
