Ingredients

- 2 cups Pecans
- 1/2 cup White Sugar
- 2 tablespoons Light Corn Syrup
- 2 tablespoons Unsalted Butter
- 1/2 teaspoon Ground Cinnamon
- 1/4 teaspoon Ground Nutmeg
- 1/4 teaspoon Sea Salt
- 1/2 teaspoon Vanilla Extract
Instructions
- Line a baking sheet with parchment paper and set aside.
- Toast the pecans in a dry pan over medium heat for about 5 minutes until fragrant, then set aside.
- In the same pan, combine sugar, corn syrup, and butter; stir until melted and bubbling.
- Use a candy thermometer to heat the mixture until it reaches 235–240°F (soft-ball stage), then remove from heat.
- Stir in ground cinnamon, nutmeg, vanilla, and sea salt, then add the toasted pecans and mix to coat.
- Scoop small spoonfuls onto the prepared baking sheet quickly before the caramel hardens.
- If desired, sprinkle with sea salt or colored sugar while warm.
- Let cool completely, then store in an airtight container.
Notes
For a twist, try adding chocolate chips or using different nuts like walnuts or almonds.
