- 1 lb lean ground chicken
- 1 cup orzo pasta
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 2 tsp dried basil
- ½ cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, mix ground chicken, chopped onion, minced garlic, dried basil, salt, and pepper until well combined.
- Roll the mixture into meatballs about one inch in diameter and place them on a lined baking sheet.
- Bake for about 20 minutes or until the meatballs reach an internal temperature of 165°F (74°C).
- Meanwhile, bring chicken broth to a boil in a pot.
- Add orzo and cook according to package instructions until al dente (about 8 minutes).
- Drain any excess broth from the orzo (reserve some if desired).
- Gently stir in the baked meatballs into the orzo.
- Serve hot with a generous sprinkle of Parmesan cheese.

For healthier alternatives, consider using whole wheat orzo or zucchini noodles.
