Description

A comforting one-dish meal featuring tender chicken and fluffy rice, seasoned and baked to perfection.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain rice
  • 2 cups low-sodium chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Spray a large baking dish with nonstick spray.
  3. Season chicken breasts with salt, pepper, garlic powder, onion powder, and paprika.
  4. Spread the rice evenly across the bottom of the baking dish.
  5. Pour chicken broth over the rice until fully submerged.
  6. Drizzle olive oil over everything.
  7. Cover tightly with aluminum foil and bake for 45-50 minutes.
  8. Uncover during the last 10 minutes to brown the chicken slightly.
  9. Garnish with chopped parsley before serving.

Ensure the internal temperature of the chicken reaches 165°F (74°C) to avoid dryness.
