Description

Delightful bite-sized cheesecakes with cream cheese and spiced apples, perfect for any occasion.


Ingredients

Scale
  • 1 cup graham cracker crumbs
  • 4 tbsp unsalted butter, melted
  • 1/3 cup granulated sugar (divided)
  • 16 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1 tsp vanilla extract
  • 2 large eggs
  • 2 medium apples (Granny Smith or Honeycrisp), peeled and thinly sliced
  • 1 tsp ground cinnamon

Instructions

  1. Preheat your oven to 325°F (160°C) and line a muffin tin with paper liners.
  2. In a bowl, mix the graham cracker crumbs, melted butter, and 2 tbsp of sugar until well combined.
  3. Press about one tablespoon of the mixture into the bottom of each muffin cup.
  4. In another bowl, beat the cream cheese, sour cream, remaining sugar, and vanilla extract until smooth.
  5. Add the eggs one at a time, mixing until just combined.
  6. Pour the filling over the crusts until they are three-quarters full.
  7. Bake for 18-20 minutes until the edges are set but the center is still slightly wobbly.
  8. Cool completely in the pan.
  9. Sauté apple slices with cinnamon in a little butter for about five minutes until they are soft.
  10. Top the cheesecakes with the warm cinnamon apple slices before serving.

Notes

These mini cheesecakes can be made ahead of time and are great for any occasion.
