Delightful bite-sized cheesecakes with cream cheese and spiced apples, perfect for any occasion.

- 1 cup graham cracker crumbs
- 4 tbsp unsalted butter, melted
- 1/3 cup granulated sugar (divided)
- 16 oz cream cheese, softened
- 1/2 cup sour cream
- 1 tsp vanilla extract
- 2 large eggs
- 2 medium apples (Granny Smith or Honeycrisp), peeled and thinly sliced
- 1 tsp ground cinnamon
Instructions
- Preheat your oven to 325°F (160°C) and line a muffin tin with paper liners.
- In a bowl, mix the graham cracker crumbs, melted butter, and 2 tbsp of sugar until well combined.
- Press about one tablespoon of the mixture into the bottom of each muffin cup.
- In another bowl, beat the cream cheese, sour cream, remaining sugar, and vanilla extract until smooth.
- Add the eggs one at a time, mixing until just combined.
- Pour the filling over the crusts until they are three-quarters full.
- Bake for 18-20 minutes until the edges are set but the center is still slightly wobbly.
- Cool completely in the pan.
- Sauté apple slices with cinnamon in a little butter for about five minutes until they are soft.
- Top the cheesecakes with the warm cinnamon apple slices before serving.
Notes
These mini cheesecakes can be made ahead of time and are great for any occasion.
